Recipe: South Asian Spin On Omelettes

A long time coming but our recipe match off for Fangirl is of course Omelettes, with a spin!

Ingredients:

  • 3 Eggs
  • 2 Potatoes peeled and chopped
  • 1 small onion chopped
  • half tsp paprika
  • salt to taste
  • half cup tomatoes chopped
  • 2 tbsp chopped parsley
  • 1 Green chilli pepper sliced
  • oil

Cooking:

  • In skillet heat oil
  • Add potatoes and simmer
  • Add onions and all spices
  • Let cook until the potatoes release liquid and dry up again.
  • Add whisked eggs. Stir to ensure the eggs don’t stick to the bottom of the pan
  • Add parsley & chillies
  • Cook thoroughly
  • Enjoy
